Dr. Palacios Rivera is an accomplished scholar. She earned a PhD in Food and Resource Economics from the University of Florida. She has over ten years of experience teaching economics and applied economics in higher education and years of experience conducting policy and market research. Currently, she is a faculty member in the Division of Applied Social Sciences at the University of Missouri in Columbia. She has been recognized for her teaching and service in the area of inclusion, diversity, and equity (IDE). All students are at the center of her teaching, while striving to develop their skills to meet industry needs. They guide decisions regarding curricular strategies, activities, as well as design and development of materials and resources.
